Sweet Cashew & Coconut Cream

Sweet cashew & coconut cream

A sweet yet wholesome cream which can be used in place of dairy cream to accompany and even frost cakes, brownies and other desserts. 

Ingredients
  1. 1 cup cashew nuts (soak at least an hour)
  2. 1/2 cup evaporated coconut milk (or use coconut milk if not available)
  3. 1/2 cup coconut cream
  4. 1 tbsp vanilla bean paste
  5. maple syrup to taste
  6. optional - add grated lemon rind

Instructions
  • Blend in thermomix (or blender) on high speed until smooth (approx 1 minute)
  • Scrape down sides add more liquid
  • Serve immediately for a pouring cream or refrigerate for a thicker cream
  • Can freeze for a delicious frozen dessert
