Sweet cashew & coconut cream
A sweet yet wholesome cream which can be used in place of dairy cream to accompany and even frost cakes, brownies and other desserts.

- 1 cup cashew nuts (soak at least an hour)
- 1/2 cup evaporated coconut milk (or use coconut milk if not available)
- 1/2 cup coconut cream
- 1 tbsp vanilla bean paste
- maple syrup to taste
- optional - add grated lemon rind
Instructions
- Blend in thermomix (or blender) on high speed until smooth (approx 1 minute)
- Scrape down sides add more liquid
- Serve immediately for a pouring cream or refrigerate for a thicker cream
- Can freeze for a delicious frozen dessert
